Pete’s Spinach & Mushroom Cannelloni

Serves Two

100g Light Philadelphia Soft Cheese with Garlic & herbs (3 syn per person)
OR
100g Extra Light Philadelphia Soft Cheese (2.25 syn per person)
OR
100g Fat free Natural Cottage Cheese (0 syn on Ee & green)

100g chopped spinach, defrosted
1 Egg
1 Garlic
50g Button Mushrooms
1 Onion
1 Red Pepper
56g Reduced Fat Cheddar Cheese, grated (He)
Handful of Basil leaves
A pinch of nutmeg
6 dried Cannelloni tubes
1 Bottle of Passata


Method
Preheat the oven to 200c

Squeeze out excess water from spinach and place in a bowl.

Add all the ingredients except the Cheddar Cheese, season and mix, then place it in a mini chopper and reduce to a thick puree.

Fill the 6 cannelloni tubes; it is very easy when the ingredients are purified!

Place in an oven proof dish and cover with Passata. Use the remaining cheese as a topping.

Cook for 20mins covered by tinfoil, then remove and cook for another 10 mins.

Eat with either a green salad or homemade Coleslaw.

Beef Stroganoff
Can be made with chicken

2 tsp virgin oil 1/4 hexB for 1 person or use frylight.
half an onion peeled and finely chopped
250 g sirloin steak trimmed and cut into thin strips
110 g baby mushrooms, halved
small glass of white wine (about 100ml) 3.5 syns =100ml
75 g Philadelphia Light
1.5 tsp Dijon mustard (1 level tsp =1 syn)
I count this meal as 3 syns to be safe.


Heat the oil in a pan. Add the onion and fry until soft, remove from the pan and set aside.Turn up the heat and quickly brown the beef strips. Add the mushrooms and cook until their juices start to run then add the onions back again.Add the white wine and let it bubble to reduce a bit. Stir in the Philly and the Dijon mustard until smooth.Serve with rice and fresh vegetables

My favourite use of philly is to make a Thai curry all creamy in lieu of coconut cream. But now there is that Kara stuff....

Anyway: garlic, chilli, ginger, lime or lemon juice, veg oxo cube, passata, philly, quorn pieces, red pepper and fine beans. Add coconut essence if you have it and almonds if you can afford the hex/syns.

Wow thank u for the idea - just tweaked a SW Korma recipe and instead of adding the nat yog I added Philly light - fantastico! X

Ime sure I've read in sw mag that you can have 100g of Philly light cheese now. Can anyone confirm this !

You can have 100g of Extra Light but that's as a B choice only so only available on Green
You get 71g of normal Light as an A or a B so on all plans.
