This is a recipe that I found when I was trawling through some of the ancient recipes that my mum has cut out and kept over the years
Pork and apple pie
Serves 4 large portions
Filling:
1lb of lean pork mince
2 onions
2-4 cloves of garlic crushed (depending on how much you like garlic)
2 dessert apples, peeled, cored and chopped
Tin of chopped tomatoes
2 tsp paprika/smoked paprika
2 tsp sage
Salt
Pepper
Topping:
2lb of root veg (potatoes, parsnips, carrot and swede), cooked and mashed
Vegetable stock/milk to mash in with the root veg
Fry light
Method:
1. Chop the onions and cook with the crushed garlic until soft
2. Add the pork mince and cook until browned
3. Add the apple, tomatoes, paprika, sage, salt and pepper and cook for about 10 minutes
4. Pour the mixture into a dish and topped with the mashed root veg
5. Rough the top up with a fork and spray with fry light
6. Cook in the oven at 180-200C until browned (approximately 30 minutes)
7. Serve with whichever vegetables you like for your 1/3 SF.
Technically the apple needs to be synned in this dish, but because the apple is barely cooked I didn't bother! Naughty of me I know Other than that this dish is syn free on EE, and syn free on green if using the pork mince as a HexA. Enjoy - it's very nice despite my initial reservations!
