Quiche (without cottage cheese)

    Slimfast/Slimming world
    1 Red Onion
    1 Red Pepper
    2 Eggs
    3-4 tablespoons fat free greek yoghurt
    Low Low grated cheese (42g healthy extra)

    I have made a few sw quiche with cottage cheese and quark but didn't like them very much and it usually makes me feel sick (no idea why as i love eggs and cottage cheese)

    Tried this for lunch today and i really enjoyed it AND it wasn't watery! I find that the quiche lets out alot of water normally but maybe thats just me.

    I wanted to eat something light for lunch on a green and red day so i wouldnt need to add extra calories such as ham, pasta etc. But of course you can add what you like.

    I used a small dish about 5-6" square.

    Place the sliced red onion and pepper on the bottom of the dish.
    Pour on the egg/yoghurt mixture and top with cheese.
    Cook for about 20-30 mins until brown.

    That sounds nice. I agree the cottage cheese one makes me feel ill xx
