Quick Question Re Carbonara

Evening all, happy valentines day and I hope you are all enjoying your evenings :)

I am about to make spaghetti carbonara for dinner tonight and have the recipe from the sw site, however, on there it doesnt say if I have to seperate the eggs or not? I searched on here and people have seperated their eggs *Confusion*. So what do I do in that respect? Also, I have Quark, do u think thats OK to use instead of fromage frais?

There's no need to separate the eggs.
i think some people use a whole egg plus an extra egg white, but I don't separate the egg.
 
I love carbonara. It's one of my staples. I never seperate the eggs, and always use quark! And parmesan. And bacon. And I add extra mushrooms in it for some superfree.

More carbonara for you from now on, eh?!

Carbonara is a real family fave in our house.
I use 2 eggs and 2 egg yolks to make it a bit richer but if I don't have lots of eggs then I'll just miss the yolks out.
I use quark or fromage frais or yoghurt, it depends what I have in.
I also add bacon (smoked for flavour) and parmesan.
Love it!
