Quorn and quinoq quiche(no pastry!!)

This a truely lovely dish hot or cold and is great if you have to take lunch to work!!!

150 g quinoa or couscous. ( cook according to pack)
6 quorn sausages , thinly sliced,
1 large onion, chopped
1 red pepper, chopped
200g peas
200g sweetcorn
150g mushrooms, sliced
worcestershire sauce.
2 egg whites
enough sliced tomato to cover top.

put cooked quinoa/couscous in a large bowel and add sweetcrn, peas, sausage and season with sauce and salt and pepper ( can add curry powder or herbs as you like)
use a spritz of "fry light" and saute onions, mushrooms and peppers.

add to other ingredients and mix well with egg white( can use yolk as well depending on how "Dusty" you want to make it!!


place in approx 8 inch pis/ flan dish, press down and top with sliced tomato and bake at about 170c for about 35-40 mins.

eat hot or cold.

roughly about 200 cals a slice. serves 6.

That's one for me to try when I get far enough into the management programme that everything is on my list :D
