Green Day Quorn Lasagne

This is a WW core recipe, its lovely


(serves 4)

On Green – 2 syns per serving plus 1 x HEA

1 pack of Quorn mince.
1 clove garlic, crushed
1 onion chopped

100g mushrooms finely chopped
1 pepper chopped small
1 large carrot, grated
1 can chopped tomatoes (large)
1 Tablespoon tomato puree (1 syn)
1 teaspoon Vecon dissolved in 5 fl oz boiling water
freshly chopped basil
1 teaspoon mixed herbs
salt & pepper
no pre-cook lasagna sheets
295g Campbell's Condensed Cream of Mushroom Soup (7 syns)
150ml (1/4pt) milk
100g ELF (philly)

120g low fat cheddar (HEA)

Pre-heat oven to 200ºC (400ºF, gas 6).

Stir-fry onions and garlic for 2-3 mins.

Add mince and vegs, cook for a further 3 mins - stirring regularly.

Add tomatoes, tomato puree, stock, herbs and season to taste.

Mix together mushroom soup, cheese and milk; set aside.

Spoon half meat mixture into an oven-proof dish. Top with lasagne sheets and half mushroom soup mixture. Repeat layers ending with soup mixture.

Sprinkle on cheese

Bake for 30 mins or until nicely browned
