Quorn Mince & Jacket Potato

1 HEXA on Green
(serves 4)


4 medium baking potatoes
Spraylight Oil
4 Spring onions (chopped)
1 red pepper (diced)
300g Quorn mince
2 tablespns Worcestershire sauce
400g tin chopped tomatoes
Small tin of sweetcorn (drained)
4 tablespns vegetable stock (oxo cube)
Salt & Pepper
42g (for each potato) of reduced fat grated cheddar cheese


1. Oven bake or microwave the potatoes.

2. Spray the oil in a non stick frying pan, fry spring onions & pepper for 3-4 minutes until softened, stir in the mince.

3. Add the worcestershire sauce, tomatoes, sweetcorn stock and seasoning, reduce heat and simmer for another 10 minutes.

4. When cooked cut the potatoes in half lengthways, open them out flat and place on a non stick baking tray.

5. Spoon over the mince mixture and sprinkle over the grated cheese, return to grill and heat until the cheese melts.

6. Serve with a side salad

Suggestions - Use a can of chopped tomatoes with garlic or mixed herbs to give extra flavour.
