    Ingredients

    1 red onion, diced
    2 Quorn sausages (defrosted if frozen)
    4 large mushrooms

    5 basil leaves, finely chopped


    Method

    1. Preheat the oven to 200C, 400F, Gas Mark 6.
    2. Heat a non-stick pan and dry-fry the onion until soft. Allow to cool.
    3. Mash the sausages with a fork and add to the pan, mixing well with the onion.
    4. Remove the stalks from the mushrooms and finely chop, reserving the caps. Add the chopped stalks to the pan along with the basil.
    5. Pile the mixture on to the mushroom caps and place on a non-stick baking tray. Bake in the oven for 10 minutes.
    6. Serve hot with salad leaves.
