Red Day Rice Substitutions?

    Any ideas? I'm making a lamb rogan josh tonight. I was probably going to end up doing some wedges to go with it but just wondered what other people use as a substitute for rice?

    Grate cauliflower to the consistency of rice then microwave in a covered dish with no water. As near as dammit to rice :)

    I didn't think you could grate cauliflower? How long do you micro for?

    I used to do it all the time when low-carbing and it carries over well to SW. Becky (wannabeminime) was asking about it a while ago.

    Grate some cauliflower (or blitz it in the blender to the consistency of rice) then microwave in a covered dish for about 5 mins (or until done to the firmness you prefer). No water required as it will go sloppy.

    Forgot to say - cauliflower is gorgeous as mash too if you drain it well and add laughing cow :) another good one for red days

    Thanks for that! Will try it tonight! I do boil broc/cauli and mix laughing cow, salt and black pepper on red days - it's lush!

    A guy i used to know used to have curry dishes along with mashed turnip as a rice substitute , i have never tried it myself though. Defo going to give the cauliflour a go though.

    Has anyone tried mixing the colli or brocli with some cottage cheese with pineapple and slappin it in the old oven? Just a thought.

    Tried the grated cauli last night - was fab! Made me feel like I was eating rice and I don't think anyone even noticed I wasn't having rice! Thanks for the tip - it was so easy to make.
