I always used the uncooked weight - I felt it was was better to start on the lower end of the scale and build up. it might seem like a small portion - but believe me, it will feel like loads of food! before you know it you can have almost unlimited quantities of protein.
One thing (a word of warning / advice) please do some research on carbohydrates while you are going through this process. Just be really careful about which ones you choose to reintroduce. it is my opinion that fruits and all grains are not ideal for our bodies or for weight maintenance. I have managed to stay at goal (or below) for eight weeks now by avoiding most carbs and eating mostly proteins and fats.
it is worth considering this as a long term option.
