Runner Beans

Hi,

My uncle gave me a massive bag of veg from his allotment including loads of runner beans.

Any suggestions on doing something more exciting than boiling them?

runner bean spaghetti. 500g runner beans, 1 red chillie, deseeded, finely chopped. zest of 1 lemon and squeeze of juice. 3 tbsp low fat creme fraiche (1.5 syns per level tbsp). eat on its, on or fish.

blanch runner beens for 2mins. frylight a pan, add chillie lemon zest to pan and fry 1min. add runner beans. cook until tender or how you like them. take off heat squeeze lemon and add low fat creme fraiche. yum. sorry remember to slice runner beans.

I am doing the runner beans with tomato and onion but will omit the butter and the corn, syn the wine.


It is just a matter of common sense when tweaking the recipes to make them SW friendly.


For example in the Bean Stew you would not use the oil but would substitute fry light.
