Smoked cod with creamy mustard sauce with spinach and poached egg

Serves 2

2 smoked cod fillets skin removed (or any smoked white fish)
1 onion finely chopped
8-10 laughing cow light triangles (10 triangles 2x hex a)
12 tsp wholegrain mustard (1 syn)
1 pack of fresh spinach
2 eggs
salt and pepper

blitz cheese triangles in a jug with water to make a creamy sauce

fill a saucepan with water and a splash of vinegar(for the eggs)

fry chopped onion in a frying pan with frylight until softened then add the mustard and cheese sauce season with pepper and reduce down a little

fill another saucepan with spinach and a pinch of salt and heat until the spinach has wilted

pop the smoked fish into the sauce and poach until cooked

spin the water in the saucepan and add the eggs cook until the white is solid

to serve place the fish on a plate cover with sauce
heap the spinach on top then top with the poached egg and add a small pinch of salt to the egg

looks and tastes like a reastaurant meal

great with new potatoes (or sw chips as I had it lol)
