Thought I'd share a few recipes I've been modifying and testing the past few days:

Serbian cufte

500g mince
1 onion
1 carrot
1 parsnip
1-2 cloves garlic
500g passata
whole allspice, star anise, cinnamon bark, whole black peppercorns, sweetener, salt

First make sauce: to 500g passata add salt (or half stock cube [tolerated]), a few allspice berries, 1 star anise, a piece of cinnamon bark, a few black peppercorns and some sweetener. Simmer for about 30 min.

Meanwhile, finely chop (or as I prefer use a cheese grater and grate it all) the veg, add salt and mince and mix together. Make medium-ish meatballs and either dry fry on non-stick pan or bake in oven. You just want to brown the outside so they don't fall apart in the sauce. When golden add to sauce and simmer, covered, for another 20 min. Nice with celeriac mash or just on its own.

Tuna mousse

1 tin tuna in spring water
1 tspn balsamic vinegar
1 tspn lemon juice
1 tspn reduced-salt soy sauce
1 tblspn ff quark
pepper

Whiz all together with a hand blender or in mini-chopper. Very tasty with the crisp bread made according to the recipe on this threat.
