ingredients
3 med onions finely diced
400g tin chopped toms
chilli flakes
2 tbsp ground ginger
1 tsp pepper
3 garlic finely diced
400g mccain simply potato dice
2 tbsp ground coriander
2 tbsp tumeric
100g peas
850mls veg stock
fresh coriander to garish
RECIPE
1 fry the onion and the garlic in frylight . once the onion is transparant add the ginger chilli flakes tumeric ground coriander and pepper and allow to cook for 1-2 mins
2 add stock and peas and tinned toms heat gently and finely add pots
3 simmer gently until the liquid is reduced to a thick paste and the pots are soft
4 garish with coriander
with this u can also add chicken breast strips or beef lean of course!!
