Stir fried chicken with jasmine rice

    Serves 4, 1.5 syns per portion on extra easy

    Oil spray
    600g chicken thighs (skinless & boneless)
    2 tsp cornflour (2 syns)
    1 tbsp sherry (1 syn)
    1 tsp sugar (1 syn)
    1 tsp sesame oil (2 syns)
    1 tsp oyster sauce
    2tbsp soy sauce
    Fresh cracked black pepper
    Spring onions
    Red pepper
    Yellow pepper
    3 celery stalks
    Garlic
    Ginger
    Chillies
    Splash of water

    Slice the chicken into strips and stir in the cornflour, sugar, soy sauce and sherry. Set aside to marinate

    Very finely chop the chillies, garlic and ginger. Chop the peppers and celery into chunky pieces.

    Spray a wok with spray oil and brown the chicken strips. Add the garlic, chilli and ginger. Fry for a few minutes then add peppers and celery, fry for a few more minutes. Add a splash of water and allow to cook. Finally add chopped spring onions and sesame oil. Stir and serve with steamed jasmine rice!
