Green Day Sweet potato and Buttnernut Squash soup

Made this last night and its yummy. It makes a really thick soup and is free on a green day.

1 Butternut Squash
4 Sweet Potatoes
2 Knorr vegetable stock pots
1 Red pepper
2-4 Garlic cloves
Black pepper


1. Cut up the butternut squash and sweet potato into chunks and boil in in the vegetable stock.

2. Meanwhile cut the red pepper in half, put some garlic cloves in the middle with black pepper and roast for about 15-20 minutes.

3.When roasted add them to butternut squash and sweet potato and wizz it.

This sounds delicious. Going to give it a go 'cos I've been looking for a nice butternut squash soup recipe for a while. I'm assuming I'll only have to count the sweet potatoes as sins if doing a Red Day? I don't really do Green Days, but I suppose I could always do the Extra Easy when I decide to have a go at making this soup.

Does it have to be the knorr veg stock pots? is a hand held blender good for wizzin soup? x

You can use any stock you like when you make your soup. A stick or hand-held blender will do the job fine - just remember to use a big pot otherwise it'll go everywhere!
