Fry light for spraying
8 spring onions, trimmed and finely sliced
1 garlic clove, peeled and crushed
900ml/1 1/2 pints chicken stock made from bovril
2 x 400g/14 oz can sweetcorn niblets
1/2 red pepper, deseeded and very finely diced
50g/2oz dried mini pasta shapes
a large handful of fresh coriander leaves, finely chopped
Salt and freshly ground black pepper


Spray a large non-stick saucepan with fry light and place over a medium heat.

Add the spring onions and garlic and stir-fry for 1-2 minutes.

Pour in the stock, increase the heat to high and add the sweetcorn and red pepper.

Bring the mixture to the boil, cover and cook for 10 minutes.

Add the pasta, re-cover and let simmer for 10 minutes.

Stir in the chopped coriander, season well and remove from the heat.

Ladle into warmed bowls and serve immediately.
