Tarragon Chicken with Mushrooms

Just had this tonight and it was absolutely delicious! Although it contains some alcohol, I've noticed that a few of the recipes from Dr D himself do, too. The alcohol should evaporate during cooking and there is only a small amount, so I'm pretty sure it's okay. Otherwise, you can leave it out.

Serves 2

2 large skinless chicken breasts, cut into thin strips
150g mushrooms, sliced
2 tsp chopped fresh tarragon or 1 tsp dried
3 tblsp sherry
150ml chicken stock
1 tsp cornflour (recipe actually says 1 tblsp, but I cut it down for Dukan)
2 tblsp fat-free fromage frais

Heat a non-stick frying pan and add the chicken strips. Stir fry for 5 minutes until the chicken is sealed on all sides. Add the mushrooms and tarragon and cook for a further 2 mins.

Season to taste, and add the sherry and the stock. Bring to the boil and then cover and simmer for 10 mins.

Mix the cornflour with a little cold water to make a thin paste and stir it into the sauce. Cook, stirring, until the sauce thickens a little. Remove from the heat, stir in the crème fraîche and serve immediately.

Goes very well with green veg. If you're on Conso, you can serve it with rice or pasta as your carb ration.
