I think you're putting an awful lot of pressure on yourself, it's great to have goals, but to look slim and slinky on the 26th??? That's madness!
By my reckoning you have 62lb to lose, well at best that will take you 31 weeks but may take 62, it may take more, but all the time you are STS or a small gain even you are better off than gaining and gaining, or not even caring what you are doing!
This is a change of life, you are going to eat this way maybe a little tweaked but do you really want to be 'on a diet' then eat like before, put on weight then go on another 'diet' then pile it all back again?
Stop looking at what is beyond your reach and grab hold of what you can see, so far you have lost 2.5lb
So only 1/2lb to make it 3, then only another 2 to make it 5.
Maybe you need to decide on a plan and stick with it for a few weeks, get yourself familiarised with the plan.
After maybe 4 weeks try another, decide which you feel is best and easiest for you.
We've said this to people so many times, but spending more on fruit and veg does NOT equal spending more over all.
Add up the takeaways, coffee out, shop sarnies, chocolate bars, sweets crisps etc and I can almost guarantee you are spending if not less then the same as before!
