Tomato Soup Recipe

I just rummaged around my kitchen cupboards looking for something to make for lunch tomorrow and ended up making a really yummy tomato soup - I've had 2 small bowls already!!

1 chopped red onion
A few garlic cloves
Chilli
Tin of chopped tomatoes
Tin of baked beans
1 red pepper
1 green pepper
Italian seasoning (or any other you prefer)

1. Chop the peppers in half and removes the seeds. Pop under a medium grill until the skins are blackened. Set aside to cool.

2. While the peppers are cooling, fry the red onion, garlic and chilli in fry light (and some water if it starts to stick) until soft.

3. Peel the skin off the peppers and chop. Put them in the pan along with the beans and chopped tomatoes. Add the italian seasoning and bring to the boil and then simmer for about 30 mins. You may need to add some water if it's too thick.

4. Blend and enjoy!! :)
