Turkey and Broccoli Stir Fry (281 cals)

This is a recipe I adapted from the big oven website (adapted as in, increased the amount of turkey and reduced the amount of veg - and it was STILL a lot of veg!)

You need:

2 cloves garlic, crushed
150g broccoli florets, sliced / halved
1 red pepper (around 130g)
260g Turkey - cut into strips (I use Tesco Healthy Living Stir Fry Version)
15ml honey
15ml soy sauce (I used dark)
15ml rapeseed oil (but other oils would work fine too)
70ml chicken stock


Directions

In a medium bowl, stir together the soy sauce, honey & garlic. Add the turkey and toss to coat. In a wok or large frying pan over medium-high heat, heat the oil for 1 minute. Add the turkey and stir-fry for 3 minutes, or until opaque. Remove with slotted spoon and keep warm. Add the broccoli and peppers to the pan. Stir-fry for 2 minutes. Add the stock and continue to stir-fry for 2 minutes, or until the vegetables are crisp-tender. Return the turkey to the pan, toss, and heat for another 5 minutes.

Breakdown: 281 Cals, 8g Carbs, 33g Protein, 2g Sat Fat and 12g sugar per portion.

I had mine with some tilda rice (for an extra 200 cals).
