Lamb steaks with SW roast potatoes and roasted med veg (mushroom, courgette, red onion and small tomatoes roasted) Dressing made with red wine vinegar and chopped mint. Now going to have a banana with a banana and custard muller light.
Its a "me" recipe, so measurements aren't exact, but yeah.
To serve 2:
You will need:
1 smallish Courgette- grated
1/2 jumbo Leek- thinly sliced
1/2 medium onion- finely diced
4-5 bacon medallions all fat removed (of course)- chopped into decent chunks
a handful of small mushrooms per person- thinly sliced
Knorr ham stock (must be as it's just the most yummiest)- made up as directed
200g risotto rice
small sprinkles of pepper, parsley & tarragon
Method
1. Gently fry the onion in frylight for 2-3 mins
2- add the courgette & garlic and soften for another 3 mins or so
3- Add in the bacon chunks and cook til just before it browns
4- add in the rice and stir through
5- add the stock in a ladle at a time
6- towards the end of the cooking sprinkle in parsley, pepper & tarragon
(we also sometimes add in a little chilli)
It's a firm favourite in our house- husband rates it 7.5/10. Enjoy and let me know what you think!
