Spicy chicken and chickpea pasta
Serves 4
2.5 syns - just syn any cheese you use optional

500g chicken or turkey mince - 10 syns
2 onions - blitzed down
1 tbsp ground cumin
1 tsp chilli powder
1 tsp garam masala
Salt
Bottle of Pasatta
Chickpeas
1/2 tub quark
Pasta
Cheese - optional but needs syning

Fry mince and onions and starting to brown, add spices and cook for 5 mins. Season and add passata, simmer for 45 mins to allow flavours to develop and sauce to reduce.
During last 10 mins if mince cooking - Cook pasta, add chickpeas to mince.
Just before serving stir in quark.
Add drained pasta, stir and serve.

2 weetabix and 2 satsumas.

Just not hungry today. Had big brekkie and a lunch out which i didnt feel good about. Snacked on fruit during the day so didnt want anything for tea.

I made my BF fajitas but I served mine with spinach instead of a wrap 100% syn free and delicious !

Same as that. Except now I have to go find SW yorkshires - yum. And I just used up my HE's on toast!!!! Darn it. Maybe I could defrost a couple of Linda McCartney rosemary and red onion sausages and mush them up for stuffing. Think they are also free on a red day....:D

I've not decided yet. I have quinoa, white bean and kale stew in the slow cooker (recipe from an amazing vegan cookbook called Appetite for Reduction - all the recipes are very SW-friendly) but my partner wants cowboy pie, so I'm making both. Depending on what day I choose, I'll have one and freeze the other for later in the week.

Cowboy pie is onions cooked very slowly over a low heat in hot water to make a gravy, with 2 tbsps smoked paprika and 1 tbsp thyme. Then you add your sausages, chop them up, add a tin of baked beans, put the lot in a casserole dish and top with mashed sweet potatoes/potato, then bake in t'oven until crispy.
