Today has been a bad day at fraggle rock! OH's birthday - so we're off for a meal! Going I try to minimise damage of birthday cake by either having salmon or steak! Things may go pear shaped though :-/

Just had some scanbran carrot and banana cake as I'm out playing Badmington tonight, HEb plus 2 syns for a tbsp golden syrup and 2 syns for a banana madness choc options mixed with fromage frais and sweetener for the filling and topping, sliced banana in the middle too

Proper green day comfort food! Quorn fillets coated with whole meal breadcrumbs, paprika & chicken oxo, new potato wedges, spaghetti hoops, 'fried onions n mushrooms - was really nice but only ate half quorn 'nuggets' coz son nicked em

WI nite so treat nite so had homemade lasagne made by OH although not ready 4 me getin in. Tasted lovely when ready tho

Made a sweet potato & carrot soup with leftovers .....
Pete’s Sweet Potato & Carrot Soup
Serves 4
Ingredients
*¼Ltr hot water
½tsp Hot madras curry powder
½Ltr Chicken stock made with a knorr stockpot
1 Onion, finely chopped (s) (sff)
1tsp Cumin
1 Cinnamon stick
300g Baby carrots (s) (sff)
300g Sweet Potato (ff)
* optional
Method
In a saucepan, sprayed with Fry Light, cook the onions until soft. Add the sweet potato, carrots & hot madras curry powder, cook for 10 mins then remove from the heat, take the cinnamon stick out & with a hand blender, reduce to a paste, return to the heat, season, reduce the heat to a simmer, if too thick add the water or if you like it thicker, then leave the water out, mix and leave cooking for a further 10 mins.
Plate up.

Hi. I got the receipe from an extra easy cookbook. I just mix piri piri seasoning with 2tbsp of soy sauce (it says to use lime juice but I dont). Just cut chicken, peppers and onion into chunks. Marinade the chicken in the piri piri and then place chicken and veg on skewers and they take ten minutes under the grill. My OH loves them as well, very tasty with a tbsp of barbeque sauce to dip them into. The wedges are marinaded in 4tsp of paprika, 4 tsp of sea salt and 2tsp of oregano. They are fab
