Whats for tea tonight?

Aldi Thai fish cake (3 syns) with chickpea and butternut squash falafels, sweet potato chips, asparagus and salad.

That looks amazing! How do you the falafels?
 
BBQ coated turkey strips, sw chips and salad for me :D

Recipe for Chickpea and BNS falafels

500g Butternut Squash cubed
1 tin chickpeas drained (keep juice)
2 cloves garlic
1 tsp cumin & 1 tsp coriander
1/2 tsp baking powder
Small bunch of parsley
Small bunch of coriander

Lay BNS on a tray, spray with frylight sprinkle salt and pepper and bake for 20 minutes until soft. Meanwhile place rest of ingredients in a blender and whizz till blended. Take BNS from oven and mash until smooth. Mix in with the chickpea mixture and leave in fridge to go cold for at least an hour. Form into small balls and spray with frylight before baking on a tray.

Sausages (Syn free ones- I've got chive ones today :)), mash, veggies, and will Syn a Yorkie pud and some gravy :)

Forgot to say use a small amount of the chickpea juice if the mixture is a bit thick depends on how you like it!
