whats your meal plans for the week??

I never meal plan and this has been my downfall this past few weeks as money and therefore food available has become more scarce so now as part of my getting back on track I have (been paid!) gone shopping, had my slow cooker on since yesterday morning and I've got a weeks worth of meals planned. Off work this week so can give myself a good restart ready for following week!

Sun - Lunch- speed soup Dinner - Slow cooked beef with chilli garlic and lime served with rice

Mon - Speed Soup Dinner - Chicken and veg stir fry with soy and satay sauce (1 syn) served with noodles

Tues - Lunch -Baked potato with tuna, salad and light seafood sauce Dinner- Bolognese

Wed - Lunch -not sure, prob a pasta n sauce with added veg Dinner - Speed soup blended used as sauce for chicken and pasta.

Thurs - lunch - SW ploughmans - Salad, hexA cheese, beetroot, pickle (1syn), ham Dinner- Veggie green thai curry and noodles

Fri - Lunch- Ham onion and tomato omelette Dinner -Beef and veg casserole

Sat - Lunch - Whatever is left over from bulk cooking, either casserole or speed soup Dinner - Chilli and rice


Feeling nice and calm and organised having planned, this might be the start of something! :)

Sat: Tian of aubergine & polenta with feta crust & chilli sauce
Sun: Roasted roots & millet with spicy pecan salsa
Mon: Celeriac, goat's cheese & walnut soup
Tue: Leek & potato soup
Wed: BritMum's Mustard beef with mushrooms
Thu: Saffron squash with goat's cheese sauce
Fri: Black kale, pumpkin & millet in tomato & almond sauce
Sat: Chicken stew with SW cheesy dumplings
Sun: Cauliflower & coconut pilaf
Mon: Julesm's Blue cheese & broccoli soup
Tue: Squash, bean & pepper soup
Wed: Pumpkin & coconut curry
Thu: JulesM's Baked orecchiette with tomatoes and parmesan

Mine is a work in progress as I always plan my menus on a Wednesday after WI on Tuesday night, the only meal that is already planned is tonights which is Chicken with chilli and cannellini beans, a recipe I am adapting from a Tesco magazine.

We actually didn't enjoy it at all unfortunately! Was a recipe I found on omnom365 but in future I would just stir fry the same ingredients. Beef flavour matures in a slow cooker and I thought it was a bit overpowering with the other strong flavours of the lime, garlic etc. Just personal preference though! Sorry I can't post a link but if you find it and try it I hope you enjoy! X

Saturday - homemade extra lean beef burgers and sweet potatoe chips
Sunday - Chicken, Veg, vegy sausage, Marmite roasties and splash of gravy
Monday - Philli carbonara, (Added sweetcorn + red pepper)
Tuesday - Spagbol
Wednesday - WW Sausages, chips, mushy peas
Thursday - Chicken curry
Friday - Un sure yet shopping day lol

getting myself all organised again as i have just been ridiculous for a good few months now and have gained tons so this is the start of a 13 week challenge that ive given myself so that when i go on holiday i feel good and not wanting to hide in the corner!!

wednesday - chicken brocolli and brown rice

thursday - sausage casserole

friday - meat free burgers and slimming world chips

saturday - mushroom and bacon risotto
