Who fancies a six week challenge?

Can I join too please if it's not too late? I would love to lose 8lb by the 10th Dec! Joined SW class last night after a few months off the wagon and yo-yo-ing

Well I decided to make them for lunch with a salad instead of dinner and they're quite nice! More like a kiev I suppose because I used turkey mince but since garlic butter isn't an option, they might actually be a good kiev alternative! I managed to get the eggs runny in the middle so they sort of had their own sauce. And the smash flakes seemed to work okay, they were a bit pale and not as crunchy as breadcrumbs but as they were syn free I can't complain!

Here is the recipe, sorry if it messes up the spacing again.

[h=3]INGREDIENTS[/h]
    • 4 room temperature eggs
    • 500 g extra lean turkey mince (less than 5g of fat per 100g)
    • 2 raw, beaten eggs
    • 2 handfuls of smash flakes
    • 3 tbsp chopped parsley
    • 1 grated onion
    • Salt and pepper
    • Frylight

  • [h=4]To boil the eggs[/h]
    • To a saucepan of cold water, add the eggs. Turn the heat on and wait for it to boil. When the water is on a rolling boil, take off the heat, cover with a lid and leave to stand for six minutes. Then put the eggs into ice water until completely cool. Peel (carefully!!) and set aside.
  • [h=4]To make the scotch eggs[/h]
    • Season the mince and add the onion and parsley. Split into four equal balls.
    • Flatten the balls and completely cover an egg, rolling into a large ball.
    • Dip in beaten egg and roll in smash flakes. Double dip for crispier crust.
    • Bake at 180C for 20 minutes.

OOh they sound lovely Liz - may well give them a go.
After losing 4 pounds this week I've had a nasty hormonal headache for a couple of days when all I want to do is eat stodgy, comfort food to stop feeling queasy so these might do the trick - I really don't fancy fruit & yogurt at the moment!
 
They're definitely comfort food! I was quite pleased with them. Good luck with making yourself feel better, I think we probably all sympathise with you!

Well I have just done my WI and have STS. Quite happy with that as week running up to * week and I usually put on! Off to Butlins for 80's weekend now so hoping I can remain (pretty much) on plan! Going to go swimming every day to try and counteract any excess alcohol (and to clear any hangover!)
 
Due to being on shiftsi haven't weighed in for a week and I am not weighing in until Monday but according to my scales I've lost but they are not as accurate as the scales at meeting so will not go off mine fingers crossed for monday

Oh don't say that - that will put the curse on me!!! Well headache has gone - now back on plan & going to meet my sister in law for a spot of lunch at Wetherspoons - we always have the same - 5 bean chilli - yummy! Without the tortillas & with rice its either free or extremely low in syns.

Hi Folks I lost 2lbs so that takes me to 7.5lbs in two weeks, this pleases me somewhat

Go Ruthie D!! Happy weekend everyone! Anyone got any plans that might threaten the diet?

I've got my husband's family coming for dinner tomorrow and i'm feeding them slimming world food so that'll be interesting!

I made some really scrummy loaded potato skins and chilli last night and have discovered that quark and fromage frais mixed together tastes just like sour cream (well I think so anyway!). Yum!
