Propoints per pepper 4

Pre heat oven to 190


I made 6 peppers so there were leftovers as we had 2 each.


150g dry basmati rice

1 tbsp oil

handful button mushrooms sliced

100g half fat grated cheese

passata

seasoning

10 olives sliced

1 onion finely chopped

2 cloves garlic crushed

6 peppers, cut off tops and scoop out white bits and seeds



Boil the rice until cooked.

Add the onion and garlic to the oil, cook until translucent.

Add the mushrooms, seasoning, rice and olives.

stir til coated in oil and mixed well.

Add enough passata to make a binding sauce (about 4-5 tbsp)

Stir through the grated cheese.

Stuff the peppers and place tops on.

Bake in oven for 50 mins.

That sound lovely. I make something similar using quorn mince. I will give this recipe a try for a bit of a change. My husband will even eat it!

I put all the ingredients into my ww app and added 120g of quorum mince. I don't know how much mince you'd use, but that's 20g per pepper (is that enough?! I've no idea) but it works out at 5pp per pepper.

My leader is veggie, so any recipes that are actually hers will be vegetarian.

OMG I wish I would of been in your WW Group when I went all that time ago, my Leader just raved about meat and fish all the time and had no clue about veggie things when I asked for advice! X

This easy vegan recipe is a hit in the award-winning vegetarian restaurant The Rainbow Café. Its so healthy – give it a try!


[h=4]Ingredients[/h]
300 g Broccoli, raw, (10oz), broken into small florets
200 g Beans, Broad, (7oz), shelled (or use a 300g can, drained)
100 g Carrots, raw, (3 1/2oz), cut into fine strips
15 spray(s) Cooking Spray, Calorie Controlled
1 medium Onion, All Types, red, chopped
3 clove(s) Garlic, finely chopped
1 teaspoons (level) Cumin, Ground
1/2 teaspoons (level) Cinnamon, Ground
1/2 teaspoons (level) Cardamom, Ground, ground
1 pinch Salt
1/8 teaspoons Black pepper
50 g Tomato Purèe, (2oz)
400 g Tomatoes, canned, chopped
100 ml Wine, Red
150 g Couscous, dry, (5oz)
300 ml Water, (1/2 pint) boiling
25 g Margarine, Soft, Polyunsaturated, (1oz) non-dairy
50 g Apricots, (2oz), chopped
10 individual Olives, in Brine, black, to garnish
4 sprig(s) Mint, Fresh
[h=4]Instructions[/h]
  • Plunge the broccoli, broad beans and carrots into boiling water to blanch them for about 4 minutes. Drain well. (If using canned broad beans, do not blanch them).
  • Heat the cooking spray in a large saucepan and gently fry the onion for 2-3 minutes, until transparent. Add the garlic and cook for another few minutes, then stir in the spices and black pepper and cook for a few seconds. Add a little salt, if you like. Add the tomato puree, canned tomatoes and red wine or water. Simmer for 5 minutes, then add the vegetables.
  • Put the couscous into a heatproof bowl and add the boiling water and margarine, stirring to mix. Add the apricots. Leave to stand for 4-5 minutes to absorb all the water, then fluff up with a fork.
  • Heap the couscous into bowls or onto plates and top with the vegetable mixture. Serve, garnished with olives and mint leaves.

Nope.
I'll still copy and paste.
I don't read them because I can't cook.
And don't usually like half the ingredients in recipes and cba to figure out how many pp it would be if I took certain things out/replaced them with other things etc.

Sometimes.
Depends how quickly I want my dinner.
I really don't mind eating microwaved food.
The boy not having a microwave is a right pita because I have to wait AGES for stuff to cook through.
I'm too impatient.
It's another reason why I don't cook.
I can't see the point in spending more time preparing and cooking something than it's gonna take to eat it.

Well... he's got one... but I accidentally blew it up a few weeks ago.
It was really old and a hand me down, so it needed replacing anyway.
But he hasn't gotten round to buying a new one yet because it was close to pay day & he was skint... and won't take the money from that bloody braces fund.
He put £35 in it the other day - that's plenty to buy a new one with.
He's such a pain!
So stubborn.
