Yummy Bean Salad

1 can black beans, rinsed
1 can sweetcorn with red & green peppers, drained
1/2 cup red onion, chopped
1/4 cup fresh coriander, chopped
2 tbsp fresh lime juice
1tsp ground cumin
salt & pepper

Combine all ingredients and refrigerate. I left mine overnight to let the flavours develop. It was sooo good! I mixed it with some couscous and gave it to some friends (who aren't doing SW) and they loved it!

You could also use pinto beans or other bean variations but I like it with mexican style beans (ie, pinto or black beans)

Ooh thanks for that Stacey. I love that sort of thing for lunch. I'm going to post some recipes from the 100 green recipes book later when I have more time. It all helps, doesn't it.
It's suprising how so few ingredients can make such a tasty dish! I can't recommend it enough and it was so easy to make! Definitely will become a weekly staple for me!
