Yummy Mushroom Stroganoff

Thought I'd share my mushroom stroganoff recipe, loosely adapted from a Rick Stein beef stroganoff:
(for 2)

1 shallot finely chopped
cumin seeds, ground in a pestle & mortar, and sweet paprika (to taste)
Lots of button or chestnut mushrooms thinly sliced
2 tbsp creme fraiche (1.5 syns a tbsp)
Lemon juice
Chopped parsley

Slowly fry the shallots in some frylight until soft. Add the spices and fry for about a minute.
Gradually add the mushrooms in batches (you will need quite a lot as they really shrink once cooked)
Cook until soft, then stir in the creme fraiche and warm through.
Take off the heat and add the lemon juice and fresh parsley to taste.

I have this with either rice or sw chips - it's lovely and tangy, and worth the 1.5 syns for creamy creme fraiche.
