Hi Susan. well this is how I do mine.
2 large onions
Tin of chopped tomatoes
Butternut squash
Swede
Carrot
Courgette
Mushrooms
Brocolli
Cauliflower
Spices or curry powder whichever you prefer.
Chop and boil the carrot, swede and BNS to get them tender
Slice the onions and fry in fry light with your spices.
Slice and add the mushrooms and courgette - fry again for a bit
Drain the other veggies and add them.
Add the tomatoes
(I tend to add my brocolli and cauli near the end to stop it going mushy on me...personal preference really)
VOILA! Easy as that.
Also, If you find you need it a little thicker or spicier then add some curry powder to some cornflour and mix with a bit of water. Then add this to your curry. You will get a thicker sauce then and it adds about 1pt for the whole lot which is about 4 portions anyway so not worth bothering with really.
