Red Day Bacon soup

    Made this today it's yummy! I've prefixed red day but you could the use bacon as your HE on a green day if you weigh out 57g, and then thicken it with potatoes tho I haven't tried it that way.

    1 large onion
    2 carrots
    1/2 butternut squash
    Stock (I used a stock pot, don't know how much water I filled a pressure cooker pot about 1/2 to 2/3rds full)
    4 large mushrooms
    4 slices of bacon fat trimmed off and cut into small strips
    1 level tlbs cornflour (3.5 syns)
    Fry light

    Soften the veggies in fry light then add the stock and water. Add the bacon and bring to the boil. Fast simmer for 30 mins with the lid on. Take the lid off and simmer slowly for another 5-10 mins depending how much you want it to reduce. Add cornflour and simmer for another 3-5 mins. Leave it to stand with the heat off for 10 mins then dig in. :D
