Ingredients

For the chips:
4 large baking potatoes (approx 600g total weight)
1 vegetable stock cube
Low-cal spray oil
For the burgers:
400g extra lean beef mince
1 red onion, finely chopped
1 tbsp chopped mixed herbs
2 tsp vegetable stock powder
4 burger baps
1 tbsp extra light mayonnaise
Lettuce
4 pickled gherkins, sliced
2 tomatoes, sliced

Method

1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Cut the potatoes into chunky chips and cook in boiling water with the stock cube for 5 minutes. Drain well and place on a non-stick baking tray. Spray lightly with oil spray and cook in the oven for 20-25 minutes until golden brown.
3. Combine the beef, onion, herbs and stock powder. Divide into 4 burger shapes, and press each one together with your hands. Cook on a non-stick griddle for 8-10 minutes each side.
4. Spread the baps with mayonnaise. Add the lettuce, burgers, gherkins and tomatoes. Serve with the chips.
