Cruise PV Caremalised sweet onion chicken with spinach

Here's a recipe I tried for my lunch yesterday. It's based on a sauce I used to make with pasta in my pre-dukan days. I would make a caremalised onion sauce by gently frying onion in brown sugar. This is a dukan-ised version!


Spinach, Passata, Onion
Chicken breast
Lemon juice, Balsamic vinegar, Sweetener
Cottage cheese


1. Cut the onion into large chunks, bring to the boil and simmer until really soft.
2. Drain and add approx 4tbsp of no sugar no salt passata. Add 1tbsp sweetener, a splash of lemon juice and a splash of balsamic vinegar. Heat on a very low setting until the sauce reduces. These added ingredients give the sauce a lovely sweet taste.
3. Place a small handful of spinach leaves into a bowl.
4. Layer on the sauce.
5. Add a chicken breast. I chargrill mine on the George Foremans.
6. Top with 1.5tbsp low fat cottage cheese. I also added a poached egg white to up the protein. Garnish with a few basil leaves and a cherry tomato.
