I made this yesterday and it is really nice with the sweet spicey flavours. I haven't included the icing topping which goes on top of a "normal" carrot cake because it didn't suggest any toppings on the SW site... maybe you could all give me some ideas please.

[FONT=Arial, Helvetica, sans-serif]1 weetabix (crushed)[/FONT]
[FONT=Arial, Helvetica, sans-serif]½ tsp mixed spice[/FONT]

1.Preheat oven to 180C/350F/Gas Mark 4.
2. Place all the ingredients into a large bowl and mix well.
3. Turn the mixture into a lined tin, cover with foil and cook for 30 minutes. Remove foil and cook for a further 30 minutes.
4. Turn out onto a wire rack to cool.
