Carrot Cake (Slimming World Style)

I made this yesterday and it is really nice with the sweet spicey flavours. I haven't included the icing topping which goes on top of a "normal" carrot cake because it didn't suggest any toppings on the SW site... maybe you could all give me some ideas please.

[FONT=Arial, Helvetica, sans-serif]5oz carrot (grated)[/FONT]
[FONT=Arial, Helvetica, sans-serif]1 tsp cinnamon[/FONT]
[FONT=Arial, Helvetica, sans-serif]1 tbsp runny honey[/FONT]
[FONT=Arial, Helvetica, sans-serif]3 eggs (beaten)[/FONT]
[FONT=Arial, Helvetica, sans-serif]1 weetabix (crushed)[/FONT]
[FONT=Arial, Helvetica, sans-serif]½ tsp mixed spice[/FONT]
[FONT=Arial, Helvetica, sans-serif]1 tsp nutmeg[/FONT]
[FONT=Arial, Helvetica, sans-serif]2 tbsp mincemeat[/FONT][/FONT]

1.Preheat oven to 180C/350F/Gas Mark 4.
2. Place all the ingredients into a large bowl and mix well.
3. Turn the mixture into a lined tin, cover with foil and cook for 30 minutes. Remove foil and cook for a further 30 minutes.
4. Turn out onto a wire rack to cool.
 
The topping is easy...mix Quark with sweetner and a touch of orange essence.

I've never tried this, or any of the weetabix cakes. I really must...
 
a nice topping is low fat cream cheese with sweetner and grated lemon !!!
tastes just like the real thing mmmmmmmmm
 
Has anyone ever made this???? is it any good?
