Red Day Cauliflower rice, useful or a no go???

One of my friends is doing another diet ( how dare she, lol) and swears this is Ok taste-wise

cauliflower rice
Ingredients


  • 500g Cauliflower (1 medium head)
  • 1 Tablespoon olive oil
  • 1 Clove garlic, crushed
  • 2 Shallots, thinly sliced
  • 1 Tablespoon soy sauce (optional)
  • Salt and pepper
Method


  1. Process the cauliflower, including the core in a food
    processor (or grate) until crumbly.
  2. Heat oil in a large frying pan until hot, sauté garlic and
    shallots until tender. Add cauliflower and cook, stirring
    until golden brown.
  3. Add soy sauce (optional) and salt and pepper to
    serve.
Tip:

  • Great with curries and stir-fries. Apparently!!!!


I do mainly green days, well all green so far this time! But thought if not breaking any rules could be useful for red days.

The recipe would be free I think if replacing the olive oil with good old fry light.

It is excellent... you can vary the seasoning pretty much however you want but it really works as a replacement for rice on a red day... :D
