Chicken kiev 280 calories per serving

Serves 4

Low fat cooking spray
4 skinless chicken breast
125g tub low fat soft cheese with garlic and herbs
2 tbsp plain flour
1 egg beaten with 2 tbsp water
50g fresh white breadcrumbs
salt and pepper to taste

Pre heat the oven to Gas5/190C/375F

Spray a baking sheet with the oil
Put the chicken 1 at a time between 2 pieces of clingfilm and using a rolling pin gentley beat them out until flattened but take care not to beat them too much or they will just break up into mush.
Remove from the cling film and divide the cheese between the 4 chicken breasts, placing it at the wider end of the chicken. Season with salt and pepper and roll up the breasts folding in the sides so the cheese doesn't run out. Use cocktail sticks or string to secure the breasts.
Roll the chicken in the flour and then dip in the egg mixture, then the breadcrumbs and place on the baking sheet.
Cook in the oven for 35-40 mins or until the juices run clear when pierced with a knife.
Remove the cocktail sticks before serving.
