Looks delicious. At one of our tasting sessions someone used cottage cheese instead of mayo, it was delicious and totally syn free. I think they must have seived the cottage cheese to get the lumps out.

You could use the Honestly smooth cottage cheese instead.


Gemma - your coleslaw looks lovely! I did one too at the weekend with grated cabbage, spring onion, carrot, apple and celery and the extra light mayo and lemon juice. I had it with roast chicken and fresh beetroot for lunch yesterday and today. Yum!
