How do you roast couscous? I was reading a message on a different forum and someone said they roast it.

I have a pack sitting in the cupboard doing nothing and this sounded quite interesting. xx

are you sure it's roasted? Maybe its the veg and other bits they put in it that are roasted? I just imagine it would go very dry if it was put in the oven!

    I found this
    For the roast couscous
    2 tbsp olive oil
    1 tbsp sesame oil
    100g/3½oz couscous
    ½ red pepper, chopped
    1 garlic clove, finely chopped
    150ml/5½fl oz hot fish stock
½ orange, finely grated zest and juice
    2 tbsp fresh peas
    small handful fresh mint, chopped
salt and freshly ground black pepper
    2. For the roast couscous, pour the olive oil and sesame oil into a small saucepan, add the couscous and fry for 1-2 minutes. Add the red pepper and garlic and fry for 1-2 minutes. Spoon into a bowl, add the fish stock, orange juice and zest, peas and mint, stir and then cover with cling film and leave for four minutes. Fluff up with a fork and season with salt and freshly ground black pepper.
