Diet coke gammon

i saw the recipe for diet coke chicken last week and loved it. so tonight i made gammon with diet coke. it was lovely and sweet.

i sealed the gammon with fry light added some onions and red pepper, fried them till soft then added diet coke. i used tesco coke as thats my favourite anyway. i simmered that for a while then added fresh pineapple and cherry tomatoes. i left it till the sauce reduced and went sticky sticky.
it was really good and i'll definately be making this one again

Did you use gammon steaks or a joint? Would a joint of gammon be free on a red day if all visible fat removed?

i used a gammon steak as i was cooking for 1. i think a gammon joint is free if you cut off all visible fat. i will be trying the joint when my oh gets home from offshore

You could substitute the coke for diet lilt and have a carribean style chicken. x Looby

how much coke did you use - i ended up with a watery coke sauce but the meat was becoming over cooked

Mmmmmmm sooo tempted to try both the diet coke Gammon & the Lilt version..... droool!!!!
