Easy peasy stew

Made this concoction the other day and it turned out really nice! Didn't know what to have so threw some things together and experimented!

1 tin chopped tomatoes
1 tin chickpeas (drained)
Chopped Onions, Mushrooms, garlic, chillis, Peppers, Courgettes (or whatever veg you fancy)
Mixed herbs
Balsamic vinegar

I fried the onions, pepper, chillis (optional) and garlic in frylight in a saucepan, then when they were part cooked I added the courgette and mushrooms with a bit more frylight.

When all the veg was nicely softened I chucked in the tomatoes and chickpeas with a large splash of balsamic vinegar and some mixed herbs.

Optional extra: When that started to bubble I laid a piece of fish (haddock, cod, river cobbler, for example) on top and let the whole thing simmer until the fish was cooked, turning the fish over half way through (be careful not to break it!)

Stew probably serves 2, fish will depend on how much you put in.
