Cruise PV Fish Curry

Another adaptation/variation of a GoodFood recipe:

I used

  • 2 large onions , sliced chopped
  • 2 garlic clove , chopped
  • 1-2 tbsp curry spices to taste(I used 1 TB curry powder plus teaspoons of coriander, cinnamon and turmeric)
  • Splash of vinegar
  • Salt&Pepper to taste
  • 400g can tomatoes
  • 500 white fish fillets (I used frozen stuff, defrosted and in large chunks)
In a large non-stick pan dry-fry the onion and garlic until soft. Add the spices and stir-fry on a low heat for 1-2 mins (it will be all dry and crumbly), then tip in the tomatoes.

Bring to a simmer, season and add some vinegar to taste. Then add the fish in a layer on top - no need to stir. Put a lid on the pan and turn down the heat. Gently cook for 4-5 mins until the fish flakes easily. Give a gentle stir and serve immediately.

This fed 2 hungry adults, but with a bit more bread and rice should feed 4 non-dukaneers!
