Freezing coconut milk????

Hi Guys,
Making a veg curry from a SW magazine tonight, recipe calls for 4 tbsp of reduced fat coconut milk. So i'm left with virtually a whole can every time i use it for such a meal.

Any one know if you can successfully freeze it? thought i could freeze it it small amounts and just use it for future recipes.

Hi, I freeze coconut milk and it is fine. I just take it out and stick it frozen into the curry or what ever I am making with no problem as long as it is heated through properly.
 
Cool thanks, I have frozen it in a Ice cube tray of 2tbsp per cube. Thats great you can just put it in frozen
 
Hi,

I froze mine in an icecube tray too. The first lot I used was fine but the second lot had been in there about 2mths before I needed it and it was horrid. It only seems to be good in there for 3 or 4 weeks. Perfect excuse for a curry again :D

I tend to use my leftovers as a replacement for milk in cakes, very yummy!
