Hi Gazz... Here is a step by step guide for you to follow as requested.
Turn kettle on and boil water or use VERY hot water from tap
Cut a lemon bar in half. Save one half for something else.
Make 5 cuts lengthwise
Make 5 cuts crosswise.
Seperate chunks as they will stick together.
Put 1 pack Vanilla into a ramekin. (small dish - about 4 inches diameter)
Add 1/4 to 1/2 teaspoon St. Clements.
Stir in 4 Dessert spoons (or 1 Tlsp measuring spoon) hot water.
Mix quickly to remove most lumps.
Stir in lemon bar bits. Move them about so not all clumped together.
Cook 1 minute, 40 seconds, on high in 800W microwave. (Adjust time if a different wattage machine)
Loosen edges with knife and turn out too cool a wee bit.

Icing: (optional)
1/2 pack vanilla
1/4-1/2 teaspoon St. Clements
2 Dessert spoons hot water.
Mix as smooth as possible. Let it sit for a few moments to thicken.
Then spread over cake.
Enjoy.
I like the St Clements a little strong, makes it more citrusy/lemony - but do to taste. If you have a sweet tooth, dissolve a couple sweetner tabs in the hot water first.

with remainig hald pack you can make the same thing but more like a cookie - just be careful it doesn;t burn - the lemon bits can over cook...

1/4-1/3 tsp St, Clements
Cut up remainder of bar
Mix pack and about 2 and 1/2 dessert spoons hot water - mix well.
Will be thinner then cake batter.
Stir in lemon bar.
Cook 1 min 40 seconds again. turn out,and turn upside down. let it cool slighlty, the lemon bits will get crunchy.
