Hi there I had same booklet but they have several ways of doing vlcd, you can do ketone way or not... Basically it's a choice, you can do in the booklet but may not be in ketosis but still vlcd..... I prefer ketosis as then you don't crave sugar. I have little bit of ham or chicken if I really need to. At least 2 times per week I eat a meal which is tuna or chicken with green veg only (no peas) and I have not been out of ketosis, but everyone is different.
