Low GI lunches

Thought it would be a good idea to start a thread about what everyone has for lunch on the low gi diet, also so i know i'm heading in right direction with this diet & to get inspiration on what to eat :)

Lunch today:
wholemeal wrap with roasted red pepper houmous, lettuce, onion, cucumber, grated carrot & an apple
 
I had a slice of ryebread with low fat laughing cow cheese triangle (my first taste of ryebread and it was gross!)

A pear, Muller light yogurt.

Normally at work i take in a salad. Either chicken or ham.
 
Carrot and coriander soup, one slice soya & linseed bread.
 
Had this today for lunch and it was really nice & filling...

co-op tomato & 3 bean soup (250 cals a tin) with soya & linseed bread
 
for lunches out, I choose a goats cheese salad or a caesar salad - croutons, or fish with veg except potatoes. I don't find it too bad. Often tempted but can resist a lot of the time.
 
I've only just started Low Gi but have been having the Tuna light lunches on top of a salad - am I right in thinking these would be low GI? They sure are tasty! xx
 
Tuna is fine. I use the tuna in brine (80g tin) and mix with a little lemon juice and a teaspoon of low fat mayo and have this with a salad of lettuce,tomato,onion,gherkin and a little beetroot. Top it off with a little balsamic vinegar.
