Maglorean Beef & Tomato Curry

I made this in the week - it was lovely but I don't think it needs all the water, half the amount would have done for me.


Maglorean Tomato & Beef Curry


Ingredients:

500g/1lb 2oz beef, all visible fat removed, cut into bite sized chunks
1 onion, peeled and finely chopped
1 tsp peeled & finely grated ginger
4 garlic cloves, peeled & crushed
400g can chopped tomatoes
A large handful of freshly chopped coriander leaves
2 fresh red chillies, sliced
¼ tsp turmeric
2 tsp garam masala
2 tsp ground cumin
4 tbsp reduced fat coconut milk
1 tbsp tomato puree
Salt & freshly ground black pepper

To serve:
110g/4oz very low fat natural yoghurt

Instructions:

1. Place all the ingredients in a non-stick saucepan together with 350ml/12fl oz water. Place over a high heat and bring to the boil. Cover tightly, reduce the heat to low and simmer gently for 1 ½ hours or until the meat is tender.
2. Uncover the pan, stir & cook over a high heat for 5-6 minutes.
Remove the saucepan from the heat and serve lightly drizzled with the yoghurt.

I made this curry last night, and it was gorgeous! I only used 1 chili instead of two, and it was still a little too hot for me (I'm a wuss...lol). I used 250ml water insead of 350ml, and it could still probably do with a little less. One of the tastiest curries I've had in a while!
