MIM Success and mid week sneaky WI

I made the MIM on a plate a spread it out and then toasted it to within an inch of its life and smothered it in poached egg and it was much better!

Also, scales showed 14st 1lbs this morning, 5.5lbs off so far this week :D but I wont be getting excited until WI day on monday

I would go that far, but they will most certainly do in the absence of bread!

I want to try and do this, Did you just spread it out on a plate, microwave it, then toast it? Or did you have to leave it first?

mixed it all up in a bowl then spread it out nice and thin on a plate zapped it then bung it in the toaster :)

When I want to make toast I make the MIM mixture a bit thinner then spread it out on two rectangular storage container lids. ZAP in the microwave for 30/40 seconds each, then give em another few seconds and just tap the lid upside down. There ya go - two 'bread' slices. You could use square ones or make the slices shorter if they won't fit your toaster properly.

I also make toasted cheese sandwiches with toaster pockets. Yum
