Thanks my lovely.......been sooo hectic last few days and 3 off! Phew needed that :)

Will get on here tonight for proper waffle (yum!) and keep up your fab work - giving up smoking I know requires REALwillpower :D

Yay!! Well done sugar, only 1 more till back in the 13's right? I lost a pound which I was happy with, after having such a mammoth loss last week!!
And yes, taking a lot of will power re smoking but more so to break the habit and routine. Catch up later and have a good day xxx

Fluids pretty good again! Lots o' water and choc tea

Wow! They all sound bloody amazing! Apart from the sushi...eurghh! Lol. Breakfasts are looking good. Is it too late to pop in for leftovers?? Hehe
 
Minks I've been poorly!!! Rotten throat infection and now on antibiotics so diet not great :( not really eating enough and craving stodgy!! Anyway pleased to say an on the mend and pleased you are doing so well xxx
Have been thinking about the graze boxes - would you recommend?

As for the graze boxes, I like them but can just be another temptation for some people.

That pork meal looks restaurant quality Minks. Please tell me how! I have a load of pork steaks in the freezer, did you use pork steaks??

Thanks Charley :) I had to try and cover up the fact it was pork as OH doesn't like it - turns out he bought himself a pizza and didn't want it anyway - git!
I just used a defrosted pork chop but steak would be easier. So simple! Bash it out till thin and nearly doubled in size. Chop mushrooms up into smallish cubes, (you could also add garlic if you wanted? but I used smoked bacon to wrap and didn't know if too many flavours might spoil?) place a handful in the middle of the steak, pull in the sides and wrap securely with bacon. I didn't precook the mushrooms, no need to be honest.
That bakes in the oven for 20 mins? It's pretty quick and the mushrooms help to keep the moisture in the pork that you can sometimes lose.
Rest of dish easy - halve new pots, shake up in a bag with chilli flakes, paprika, sea salt and black pepper. Roast for 30-45 mins depending on oven, mines cr@p so everything goes in on 250c!
Ratatouille / sauce? Chop all veg into small chunks - onion, mushrooms, garlic, pepper (had I any courgette I would have added that too) and slowly fry so soften. When soft, add chillies, smoked paprika and can of chopped tomatoes. Bring to the boil, turn to a simmer and reduce to desired consistency.
Wasn't bad for a random throw together :D xxx

Minks am finally back in the land of the living - been sooo rough :( but hubby took me to Toby Carvery yesterday - just what I needed. Turkey and loads of veg with no roasties or Yorkshire pudding! And no pudding!!! Would love to try the graze box sweetie but let me know which options you choose to make sure I don't go mad xx

Food is looking fab with you as always - you are a great cook xx

The ratatouille I made is SW and delicious - freezes great too.......shall look up recipe and post it for you - can't remember as this was defrosted from a batch bake many moons ago xxxx
 
method
1. Prick the baking potatoes all over with a skewer, spray with Fry Light and sprinkle with sea salt. Place in a microwave at the highest power and cook for 10-12 minutes or until tender.

2. Meanwhile, make the pan-fried ratatouille. Heat a large, non-stick frying pan, spray with Fry Light and add the garlic, spring onions, courgette, red pepper and aubergine. Cook over a high heat for about 4-5 minutes, stirring often, until the vegetables start to brown at the edges. Stir in the tomatoes and continue to cook for 2-3 minutes. Stir in the flat-leaf parsley, remove from the heat and season well. (This can be made the night before and re-heated quickly on the day in a frying pan).

3. Serve the jacket potatoes, split in halves or quarters, with the ratatouille spooned over them
 
Have just had lovely long chat with my sis on phone - she lives in Liverpool and we try and have a natter every day. She's been to Spain for 2 weeks and has decided to join me on SW - yippee!!

Hope you can bear with me whilst I reset my stats yet again - weigh in day will be every Monday and I am really, really going to go for it! Am sure I must hold the record for the most restarts and hope you can put up with me :)

Today I am doing a yummy SW roast chicken with loads of veg including roasted butternut squash with balsamic vinegar.....pic to follow.
